Pascal Auger, our Chef

Pascal Auger, our culinary genius, a by-word in simplicity, authentcity and creativity.

From an apprenticeship in a restaurant in Bourges, he went on to master his art with renowned chefs such as Willer, Girault and Passard.

During his time in Normandy, he achieved the accolate of first place of Chef de Cuisine in Royal Hotel in Deauville.
Re-established in his native Berry in 1991, he was awarded a Michelin star, reaffirming his reputation for talent and creativity.

After 10 months presiding over the famous " Chez Serge ", Michelin awarded him a star and other guides (Gault & Millau, Champérard...) confered similar distinctions.

In the autumn of 2004, he took charge of Chateau de Salettes in the heart of Gaillac wine country, at Cahuzac sur Vère, where he was reunited with Thierry Barbier, deputy director and former head wine waiter and colleague in Charente Maritime and in the Cher.

BANQUETS 

The Chateau of Salettes proposes a broad choice : "All inclusive" from 60 € (with a starter, a main course, and cheese - wines, mineral water and coffees included.)
On request, we can provide examples of menus. Our chef will be pleased to work out a personalized menu according to your wishes and depending on the season.

Restaurant Room and Terrace

Our two restaurants rooms can seat 50 when arranged for individual tables or 80 if required for groups.

Our terrace overlooking the vineyard can seat 50 guests.

The Wine Card

Our wine card offers a range of French vineyards as well as a large choice of South West wine, the Gaillac in particular

Times Restaurant Openning

May, June and September:
- Restaurant is closed Monday lunch and Tuesday lunch.
During this period, group and seminars will be welcome on booking (minimum 8 peoples)

July and August:
- Restaurant is closed Monday lunch, Tuesday lunch, Wednesday lunch and Thursday lunch

October:
- Restaurant is closed Monday lunch and dinner and Tuesday lunch and dinner.
During this period, group and seminars will be welcome on booking (minimum 8 peoples)

Restaurant service:
12.00am to 1. 45pm  and 7.30pm to 10.00pm
Tasting menus not will be able to be any more ordered from 1.30pm and 9.30pm
